Chef’s Table: Sweet potato and carrot soup with a chilli kick and super spice turmeric (Vegan)

Enjoy this warming soup using seasonal root veg and healthy spices, courtesy of Meme Café Bar…

Ingredients:

1 red onion
2 sweet potatoes
2 carrots
half a red chilli
teaspoon of root turmeric
water to cover
salt and pepper

Method:

Very simple, gently fry the onion in a little oil, add chilli and turmeric, add sweet potato and carrot and water, salt and pepper, bring to the boil and then simmer until veg is soft and then blitz.

Use organic ingredients where possible and serve with some crusty local sourdough.
